Eva is now 8 months and 1 week old. So, it's only appropriate to post a couple of pictures of her from when she was 7 months old. I work at least one month behind! In the picture of her with the white sweater, she reminds me of a glo-worm toy I had as a kid.

It has been a very long time since my last post! I'm very busy with school, planning a church wedding, and life itself. I'm sure you all can agree, life keeps us busy! Eva is 8 months old as of Tuesday. She is also ill for the first time in her life. She has had a fever for three days now, and this morning a rash appeared. It's roseola. Apparently, there is an outbreak going on in my area, so says the doctor. Good news is, she will be fine.

I'm trying to see how Eva will look with hair. I guess I'll have to wait for her to get her own.

I cooked entirely too many cookies in the last couple of days. I made cream cheese, walnut and chocolate crackle. Both are very yummy, and therefore, very dangerous to be around. I especially enjoy the walnut cookies with a cup of coffee. They are not unlike a soft biscotti.

I will post a picture of them and their recipes later. I'm too tired right now. Plus, if I'm honest, I am too anxious to continue reading Breaking Dawn. Like the walnut cookies, a guilty pleasure of mine.

I just had class all weekend long. I'm exhausted. But for now, I am finishing up a photo edit and exporting them to DVD. I'm also drinking wine, and looking forward to watching Dexter.

I am beginning to have an inner dialogue about having an art show. I suppose now that I have mentioned it is more than just an inner dialogue! I have some ideas for a couple of video pieces, but am lacking the funds. Anyone want to donate? Anyone interested in a joint exhibit? I'm ready to get back into the swing of things, yah.

Homemade chicken noodle soup. Even the noodles are homemade.

First, saute one onion, some celery, carrots, and two cloves of garlic in some olive oil. Then, add water, some salt and pepper, and dried basil (or, fresh if you have it). I then like to add boneless, skinless chicken breasts (2). You could use an entire chicken if you wanted, and then pluck the meat later. I let it all simmer for about an hour and then I shred the chicken breasts.

To make the noodles, you'll need:

2 1/2 cups flour

1 pinch salt

2 beaten eggs

1/2 cup milk

1 tablespoon butter

In a large bowl, stir together the flour and salt. Add the beaten egg, milk, butter. Knead dough until smooth (5 mins). Let rest in a covered bowl for 10 mins.

On a floured surface, roll out to 1/8 inch thickness. Cut into desired lengths and shapes.

Allow to air dry before cooking.

Bring soup to a boil and add the pasta. Cook until al dente.

Yum!

and I'm nervous! I keep having a fear that Bush is somehow, at the last minute, going to announce that he will be president AGAIN! The last two elections were such a farce, and the last eight years so treacherous, that I really do fear there is something up his sleeve.

In even stranger news, but better news, Eva really enjoys listening to Antony and the Johnsons.

Scrambled eggs with spinach and smothered in cheese! Sauteed potatoes and onion. If you do not have much time, microwave the potatoes until almost soft, then saute until brown/crusty on the outside and soft on the inside.

Eva hangs out with me while I cook. She loves to jump in her Baby Einstein jumper.

Vaccines! Ugghhhh!!!

I am very bothered by the American vaccine schedule and the possible correlation between vaccines and autism, ADD, etc. When I was a kid, we got maybe 6 shots by the age of 2. Now, kids are getting 32 shots by the age of 1! Not to mention, there have been no studies done on the effects of giving so many shots in such a concentrated time. Why haven't we demanded more for our children? I don't want to blindly give all these shots to Eva. So, I have saturated my life with vaccine research since before she was born. I'm going crazy with all the information, and lack thereof. Something in my gut tells me the vaccines are wrong. I nurse, I try to eat all organic, non-processed foods. I don't smoke, I use cloth diapers. I recycle. I guess what I am trying to say is this, if we try so hard to make sure our children eat healthy and live in a healthy environment, why do we say okay to shooting them up with formaldehyde and other chemicals? (yes, there is formaldehyde in most, maybe all, vaccines. For more information, read Dr. Sears', The Vaccine Book)

Tomorrow is Eva's 4 month well baby exam. She is suppose to get a ton more shots. I am going to say no. I am going to use Dr. Sears' alternate vaccine schedule, as well as, eliminate some I find completely unnecessary. Now, I can go to sleep.

If, like me, you can't wait to check Postsecret every Sunday for new postcards, then you have already stumbled across the one above. The card gives me chills. I'm not sure if the card's sentiment is a threat, or a fear. I am greatly saddened by either option.

Smokey Tomato and Chickpea stir with rice

Inexpensive, vegetarian and very tasty! What more can we ask for? Saute 1 onion, 2 cloves garlic. Then, add one can chickpeas and one can diced tomatoes. Stir, and add cumin, chili powder, salt and pepper, and honey to taste. Optional: black olives, or raisins, depending on your mood.

I like to serve this with jasmine rice, or cous-cous.

It's about $3 dollars and makes 4-5 servings. Yum!

This is my first attempt at blogging. I have participated in social networking, and have read many blogs, but am just now trying it out for myself. I use to journal. However, I recently tore out all the incriminating pages and shredded them! I'm laughing as I tell you this piece of information. Keeping a diary makes me nervous. After all, it is so permanent. Will my rambling, angst written words be how I am remembered? Not unless someone decides to paste them back together!

As I re-read them and shredded the memories, I remembered My So Called Life. I was Angela Chase as I shredded the strangely odd details of my past.

Now, I am a mom. I am a wife, and I am almost a librarian. And, I am sometimes a photographer, with a degree to prove it. As many women in the 21st century, I wear many hats. I am an American mom. I suppose now, that someday, my children will remember a part of me by my rambling, silly blog, This American Mom.
